Honey Pecan Granola

This homemade honey pecan granola is warm, crunchy, and naturally sweetened—made without seed oils or refined sugars. It's a wholesome granola that’s perfect for yogurt bowls, snacking, or gifting.

Ingredients

  • 4 cups old-fashioned oats
  • 1 ½ cup raw pecans chopped
  • 3/4 teaspoon fine salt
  • 2 teaspoons ground cinnamon
  • ½ cup melted coconut oil
  • ½ cup honey
  • 1 teaspoon vanilla extract

Instructions

  • Combine all dry ingredients in a large bowl.
  • In a small bowl combine melted coconut oil, honey, and vanilla. Add to dry mixture and stir well to combine.
  • Dump onto a small parchment-lined baking sheet, and press down with a spatula (you want the granola to be a little crowded).
  • Bake for 22 mins at 350 degrees, using a spatula to stir the granola and press it down into the pan halfway through.
  • Let cool completely before breaking into chunks. Store in an airtight container for up to 3 weeks.
