This homemade honey pecan granola is warm, crunchy, and naturally sweetened—made without seed oils or refined sugars. It's a wholesome granola that’s perfect for yogurt bowls, snacking, or gifting.
Ingredients
4cupsold-fashioned oats
1 ½cupraw pecanschopped
3/4teaspoonfine salt
2teaspoonsground cinnamon
½cupmelted coconut oil
½cuphoney
1teaspoonvanilla extract
Instructions
Combine all dry ingredients in a large bowl.
In a small bowl combine melted coconut oil, honey, and vanilla. Add to dry mixture and stir well to combine.
Dump onto a small parchment-lined baking sheet, and press down with a spatula (you want the granola to be a little crowded).
Bake for 22 mins at 350 degrees, using a spatula to stir the granola and press it down into the pan halfway through.
Let cool completely before breaking into chunks. Store in an airtight container for up to 3 weeks.
