Preheat oven to 350 degrees and line a medium sized baking sheet with a baking mat or parchment paper.
Combine all dry ingredients in a medium sized bowl and stir.
Melt coconut oil in a small bowl and add maple syrup.
Pour wet mixture into dry mixture and stir until everything is completely combined.
Put mixture on a baking sheet and press out into an even layer.
Bake for 22 minutes, stirring half way. Making sure you press the granola down again once you’ve stirred it.
Remove from oven and let cool 5-10 minutes. It will really crisp up during this time.
Store in an airtight container on the counter for up to 2 weeks.
