Ingredients

  • 1 egg
  • 1/3 cup milk
  • 1/2 cup homemade protein pancake mix see notes for recipe to make your own, or you can use store bought
  • optional mix-ins banana, chocolate chips, frozen fruit, etc
  • toppings maple syrup, greek yogurt, nut butters, etc

Instructions

  • In a microwave-safe glass bowl, crack in 1 egg and whisk until scrambled.
  • Add 1/3 cup milk and 1/2 cup protein pancake mix to the bowl. Stir well until everything is fully combined.
  • Mix in any extras you like—such as sliced banana, frozen berries, or chocolate chips.
  • Microwave the bowl for 2–3 minutes, or until the batter is fully cooked and no raw spots remain.
  • Let it cool slightly, then add your favorite toppings like maple syrup, nut butter, or a spoonful of Greek yogurt.
